Barbara's Victoria Sponge cake wins Baked with Love 2019

We are delighted to announce the winner of our Baked with Love cake recipe competition is....Victoria Sponge! The recipe was selected by Barbara at Swanholme Court Care Home who sent it in for our Valentine's cake recipe competition. Barbara's tip is to use Lemon Curd in the middle instead of strawberry jam. It received the most votes from residents who got to sample three cakes at our Valentine's Day tea parties. Well done Barbara!Swanholme Court Care Home

The recipe Barbara chose is below:

Ingredients

200g Unsalted Butter

200g Caster Sugar

1 tsp Baking Powder

200g Self Raising Flour

4 Medium Eggs

1 tsp Vanilla Essence

Filling

250 ml Double Cream

½ Jar of Jam

Icing sugar to dust.

                                        

Method.

Cream together the sugar and butter. Add the eggs and continue beating, Add the flour and the baking powder and fold up till the mixture is smooth.

Pour between two lined cake tins and bake on 170 degrees for approx. 30-40 minutes. Allow to cool.

Warm the jam and spread over one of the cooled cakes. Whip the cream and spread over the jam.

Put the other cake on top of the cream and dust with icing sugar.
